Best Chocolate Vegan Brownies

Ingredients

cup plus 2 tablespoons peanut butter

cup plus 1 tablespoon melted coconut oil

tsp vanilla extract

cup maple syrup

tsp sea salt

cups of gluten free flour or almond flour (any flour of your choice)

cup vegan chocolate chips
Cocoa Layer:
1 1/2
cups walnuts
2
tbsp cocoa powder
1/4
tsp sea salt

soft dates (remove from fridge when you start baking)

tbsp water
Directions

Line an 8x8 inch baking pan with parchment paper

In a large bowl, mix together the peanut butter, coconut oil, maple syrup, vanilla and salt until just combined. Add flour to the mixture and stir until combined. Add the chocolate chips and press into the pan. Place in the freezer so that it firms up while making the cocoa layer.

Use your kitchen aid to pulse the walnuts, cocoa powder and sea salt until the walnuts are well chopped. Add the dates and pulse to combine. Add 2 tablespoons of water if the mixer gets stuck. Mix until smooth. Remove pan from freezer and spread on top. Freeze for at least 30 minutes. Remove. Slice into bars and enjoy! Store in the fridge for long lasting taste!
