Baked Mac And Cheese

Ingredients

cups Elbow Macaroni (uncooked)
3
tbsp Butter
3
tbsp All Purpose Flour
2
cups Milk (not skim)
1
cup Colby & Monterey Jack Shredded Cheese Blend
1
cup Sharp Cheddar Shredded Cheese
pinch Salt
pinch Pepper
Directions
1.
Preheat oven to 350 degrees.
2.
Add 1 tsp salt to water and bring to a boil in a medium pot. Add pasta and cook for 1-2 minutes less than the box recommends.
3.
While pasta is cooking, melt butter in a large pot. Next, add the flour and stir over medium heat until it is lightly browned; 1-2 minutes.
4.
Add milk, salt, and pepper to mixture and whisk until smooth.
5.
Cook over medium-high heat until mixture starts to thicken and begins bubbling; ~6 minutes.

Add in both types of cheese and whisk until it is smooth and all cheese is melted. Turn off heat.
7.
Drain pasta when it is finished (almost done but still slightly firm; it will continue cooking in the oven).
8.
Stir the pasta into the cheese sauce.
9.
Once fully mixed, pour pasta into a glass 9x9 pan. Sprinkle a small amount of cheese on top.
10.
Bake in oven for 25-35 minutes, or until top is golden brown and center is bubbling.
11.
Take out and let sit for 5 minutes before serving.
