Spanish Tortilla

Niki's version of a Spanish tortilla

Ingredients

eggs

onion, chopped
1
potato, chopped
dash salt
dash pepper
olive oil
Directions
1.
Preheat oven to 350 F. Saute onions in olive oil and set aside.
2.
Cook potatoes in olive oil until tender. Set aside.
3.
Whisk together eggs in bowl, season with salt and pepper.
4.
Coat small to medium iron skillet with olive oil, and pour in egg mixture. Begin to heat eggs on stovetop on low heat; add sauteed onions and cooked potatoes until no more fit in pan. Continue to heat on stovetop until edges begin to firm up.
5.
Transfer to oven, and check regulary until egg mixture looks firm (perhaps half an hour or more). Insert knife in center to test for doneness. If knife comes out clean, tortilla is done. When done, transfer to plate for serving, and to stop the tortilla from continuing to cook in the iron pan.
