Mom's Cornbread Stuffing

This is the stuffing my mom makes at Thanksgiving every year. There is nothing else like it!

Ingredients

Recipe Homestead yellow cornbread

cup of chopped onion
1
cup chopped celery
1/3
cup of butter

eggs (beaten)

tsp sage
1/2
tsp black pepper
1
tsp poultry seasoning

cups of chicken or turkey stock
1/2
lb of cooked bacon
1/2
tbsp bacon drippings
Directions

Bake homestead cornbread, let cool, crumble, and add to a large bowl. Lightly brown 1 cup of chopped onion, 1 cup of diced celery, in 1/2 tbs of butter. Add 2 beaten eggs, 1 tsp sage, 1/2 tsp pepper, 1 tsp poultry seasoning to the cornbread crumble plus the vegetable mixture. Add 3 cups of chicken stock, bacon, and drippings. Stir and pour into a well greased pan (13x9). Bake at 350 for 40 minutes or until browned to your liking.
