Vegetable Bisque

Mamaw's favorite.

Serves 6people
Ingredients
1
stick butter
1
large onion (chopped)
2
medium red potatoes (peeled and cut into 1 inch pieces)
2
carrots (cut crosswise into ¼ to ½ inch sections)
4
small to medium yellow squash (cut crosswise into ¼ to ½ inch sections)
2
+ can’s chicken stock (4 cups from a base)
Salt to taste
1/2
tsp cayenne pepper
1
cup half and half
1
tbsp paprika (sweet)
Directions
1.
Saute onion in butter over high heat.
2.
Add veggies, salt, pepper and stock.
3.
Bring to a boil, then reduce heat and simmer for 45 minutes.
4.
Puree (using a “motor boat” or by batches in a blender).
5.
Return to pot.
6.
Stir in the half and half.
7.
Top with paprika and serve.
