Buffalo Pulled Chicken Mac And Cheese

Ingredients
Buffalo sauce

oz cream cheese
2
oz shredded cheddar-jack cheese
1/4
oz Ranch seasoning
1/2
lb chicken, cooked and shredded
1
oz scallions
4
oz elbow macaroni
Salt and pepper
1 1/4
cups milk
pinch of sugar
2
tbsp butter
1
tbsp all-purpose flour
Directions
1.
Bring a medium saucepan of salted water to a boil. Add pasta and cook until al dente, about 5 minutes. Reserve 1/3 cup cooking water, then drain pasta.

Preheat broiler with a rack in the top position. Trim ends from scallions and thinly slice.
3.
In a liquid measuring cup, combine ranch seasoning, 1 ¼ cups milk, and a pinch of sugar. Set aside.
4.
To a saucepan, melt 2 tablespoons butter, then add chicken to brown. Sprinkle with 1 tablespoon flour.
5.
To the same saucepan, whisk in milk mixture with the reserved pasta water. Cook until sauce is smooth and thickened, 2-3 minutes.

Remove from heat, then add shredded cheese and cream cheese until melted.
7.
Stir in pasta and season with salt and pepper
8.
Transfer chicken mac and cheese to a medium backing dish and drizzle with buffalo sauce (as much as you’d like!).
9.
Broil for 2-3 minutes until browned and bubbling. Top with sliced scallions.
