Shepherd's Pie

Best served with light side salad.

Ingredients

cup diced(rough-1/2 inch) cooked beef or pork roast
1/4
cup roast gravy plus more for topping)
1/2
onion chopped
2
tbsp butter or vegetable oil
1
cup petit pois peas
1
cup chopped carrots (optional)
4
cups mashed potatoes
2
cups shredded cheddar cheese
Directions
1.
Sauté the onions in the butter (preferred) or oil until they are tender (they won’t cook more because you’re only going to bake this to warm it up).
2.
Add the gravy and diced roast to the onions and stir.
3.
Add the peas (you can add diced cooked carrots too if you want).
4.
Heat mixture thoroughly, stirring occasionally.
5.
Scoop the mixture into the baking pan and spread evenly.
6.
Spoon the mashed potatoes (they should be cooled) over the top of the meat mixture and spread evenly. (You want a good 1” depth of potatoes on top –more if you have them).
7.
Sprinkle the shredded cheddar cheese over the top of the potatoes then bake at 350 for 30 minutes.
8.
Ladle a little of the extra gravy (heated) over the top before serving.
