Smothered Greens With Turnips

These are great as a side dish, but are also good served as a main dish over some white or brown rice with some fresh baked corn bread!

Ingredients
1-2
lb fresh greens – depending on how big the bunches are at the store this will be 2-4 bunches of collards, mustards, turnip greens – washed, cut out the thick stem then coarsely chop into approximate 2”-3” pieces (Note: you can mix different greens)

lb to 1 lb ham, sausage, smoked pork or bacon (depending on the amount of greens) cut into bite-sized pieces
1/2
large onion chopped
1/4-1/2
tsp each red, white and black pepper (to taste)

tsp salt

tbsp brown sugar

tbsp oil (vegetable preferred – but you can use olive oil too)

– 3 cups water
Directions
1.
Over medium high heat, drop in the meat and brown lightly in a large pot or pan at least 4" deep.

Add the onions and cook until just soft.
3.
Add the greens then the water. The greens may over fill the pot so use a large spoon to fold them until they wilt down and all of the greens fit.
4.
Add the salt, pepper and sugar.
5.
Cover and simmer for 15 min, then uncover and cook for another 30 minutes. Keep the heat high and cook off most of the water. Keep a close eye on these because once the water is gone they burn FAST!
