Sweet Potato Puff

Ingredients
6
medium sweet potatoes
1/4-1/2
cup brown sugar (1/4 cup is fine if you’re using amaretto)
1
stick butter, cut into table spoons(melted –unless the potatoes are still pretty hot)
1/4
Half and Half(you might need to add another ¼ cup if it’s too thick)
1
tsp cinnamon
1/4
cup DeSaronno Amaretto
dash of salt
Marshmallows –as many or as few as you like
Directions
1.
Preheat oven to 400 degrees F and place a sheet of aluminum foil on a rack set in the center of the over.
2.
Pierce sweet potatoes with a fork, and place on foil and bake for one hour.
3.
Let the potatoes cool just until you can handle them- cut them in half and scoop the filling into a bowl.
4.
Add the remaining ingredients to the bowl and blend with a hand mixture until smooth.
5.
Scoop mixture into a 9” X 15” glass baking pan –DON’T TOP WITH MARSHMALLOWS UNTIL RIGHT BEFORE BAKING.
6.
Before adding marshmallows, either heat the sweet potatoes in the microwave until hot, or bake for 30 minutes.
7.
Top with marshmallows and bake until marshmallows are browned and melted.
