White Bean Soup

Ingredients

tbsp vegetable or olive oil
1
lb ham steak chopped into rough
1/2
inch squares (can also us 1 lb smoke sausage)
1/2
onion chopped
2
stalks celery (chopped)
4
medium carrots peeled and cut
2
medium turnips (peeled and cut into roughly ½ inch cubes)
4
cups kale (whole leaf –cut out the fibrous stalk –if using bagged cut out the heavy stalks)
10
cup chicken broth (10 cups water with 10 tsp Better than Boullion)
2
cans white beans (navy are smallest, great northern or cannelinni)
NO SALT (the broth has enough)
Directions
1.
On high heat in a soup pot, brown the ham in the oil.
2.
Add the onions and sauté until the onions are soft.
3.
Add the carrots and turnips and stir a few times.
4.
Add the broth and bring to a boil.
5.
Reduce heat to medium high and cook for 10 minutes.
6.
Add the kale and cook for another 10 min.
