Creamy Chicken Wild Rice Soup

Ingredients
2
tbsp clarified butter
1
large tbsp. garlic
1
cup onions
1/2
cup celery
1/2
cup carrots
2
tbsp flour
4
– 6 cups chicken broth (depending on how thick or thin you like it – I use 4 cups)
2
cups shredded rotisserie chicken
1
full package Wild Rice Blend (Uncle Ben’s)
1/2
cup cream
Directions
1.
Sauté garlic, onions, celery and carrots in clarified butter
2.
When vegetables are tending, stir in flour to absorb the oil
3.
Add broth and bring to a simmer
4.
Add cooked chicken and cooked rice
5.
Thicken as needed with roux
6.
Add cream and heat until warm – do not let soup boil at this point
7.
Enjoy!
