New York Cheesecake

Brenda, May the lord bless and keep you as you enter a new phase in life. I pray you find fulfillment and joy in all your future endeavors. You have been an irreplaceable presence in dispatch, your absence will be felt by so many. I hope that we all can build on the foundation you have left. Now enough of the mushy stuff, don't go giving out these recipes. I consider you a sister. Sometimes I want to hug you, other times I want to pull your hair and steal your purses. But through the good, bad and ugly there isn't much I wouldn't do for you if asked. Have a wonderful retirement...Pat

Ingredients

packets of cream cheese

crushed graham crackers

can blueberry pie filling

can cherry pie filling
Directions

Important (bring eggs and cream cheese to room temperature or place in bowl and leave out overnight. If you mix this cold you will have a jelly consistency not a creamy one.) Learned the hard way

Now blend all ingredients together save yourself and your mixer the headache and place portions of the mix in the blender. Once all is blended and no lumps remain, pour blended mix in a bowl. Repeat this step until all the mixture is blended and smooth.

Spray a 9 inch springform pan with cooking spray. Coat the bottom of the pan with gram crackers. Slowly pour your mixture on top. You will want to place this pan in a large baking dish. I use the pan I make a turkey in. Add water to this outer pan about three quarters to the top of the springform pan. This will allow your cheesecake to cook evenly.

Bake at 350 for approx 1hr. This may take more or less time depending on your oven. The top will crack this lets you know that it's close to being done. I place a butter knife in the center to check it. You don't want the knife to come out clean like a regular cake. You want to see that the cake is clumpy and not liquid. Once you have reached this, take your cake out. Remove cake from water bath. Leave the cheesecake out to cool for 30 minutes to an hour then place in the fridge for 24hrs. Yes it will take that long for it to fully set and cool. Once it is fully cool, run a butter knife around the cake and pan prior to taking off the outside of the pan.

Add the toppings of your choice and enjoy
