Knoephla Soup

Brody and Bryce's favorite soup. I always make extra because its even better the 2nd day!

Ingredients
Noodles: 1 cup milk, 1 egg, 2 cups flour, 1 tsp salt
Soup:

potatoes

onion
1
carrot
1
celery
6
cups of chicken broth
1
tsp parsley
1
tsp salt
1/2
cup butter
1
can evaporated milk
Directions
1.
Noodles: Beat egg and add 1 cup milk. Mix into flour and salt. Mix with a fork and then knead with hands adding more flour as needed. Flour top and bottom and roll out. I use a lot of flour so they don't stick together. Cut into approx 1/2 inch squares with a pizza cutter. Set aside. I always make extra noodles.

Soup: Add broth vegies and potatoes to a soup kettle and boil until potatoes are soft. Not too soft or they will just mash up. Add noodles and cook for 5 to 10 min until they are soft. At very end add butter and evaporated milk to thicken.
