Sweet Potato Casserole Dip

Ingredients

lb (about 2) sweet potatoes
3
cups miniature marshmallows
1
pkg. (3.4 oz.) vanilla instant pudding
2
tsp ground cinnamon
1 1/2
cups milk
1
tub (8 oz.) whipped topping, thawed
Directions

Heat broiler. Pierce potatoes in several places with fork. Microwave on HIGH 5 min.; cool 5 min. Meanwhile, place marshmallows, 2 inches apart, on foil-covered baking sheet sprayed with cooking spray. Broil 1 to 1-1/2 min. or until lightly toasted; cool. Cut potatoes lengthwise in half; scoop flesh into large bowl. Beat with mixer until smooth. Add dry pudding mix, cinnamon and milk; beat 2 min. Gently stir in COOL WHIP and 1/2 the marshmallows. Refrigerate 1 hour. Spoon dip into serving bowl; top with remaining marshmallows.
