Ingredients

lb menudo, cut into squares

tbsp salt

clove garlic

onion
1
large can Hominy washed and drained
Red Chile
1
bag medium or ho red chile dry pods.
1

Directions
1.
In a large stock pot, bring menudo to a boil. Cook simmering for 3 hours, until tender.
2.
Add salt, garlic, onion, and hominy. Bring to a boil again. Simmer for 30 minutes.
3.
Red Chile for menudo- soak red chiles in pot of hot water for 30 minutes.
4.
Remove stems and seeds.
5.
Blend in blender + water used to soak.
6.
Strain and remove excess skin and blend clove of garlic and salt.
