Kielbasa And Veggies

Dad's specialty! An easy, tasty go to dish.

Ingredients
2
lb kielbasa, sliced into coins or 2 lbs smoked sausage, if you prefer sliced into coins
3
cloves of garlic
1-1
1⁄2 large onion, cut up in large chunks
1-1
1⁄2 bell pepper, cut up in large chunks
1
lb mushrooms
olive oil, for sautéing
Cooked rice
Directions
1.
Heat up a large frying pan with olive oil on medium high, while it is warming, cut up the veggies and kielbasa.
2.
Sauté kielbasa until browned and a bit crispy around the edges. Remove kielbasas and add veggies to the pan and sauté.

Cook uncovered for about 3 minutes, making sure everything does get coated with the olive oil while stirring. Cover pan and allow to steam, about 8-10 minutes. Stir every once in a while to make sure it doesn't burn.
4.
Add kielbasas to veggies and cook for 3-5 minutes more. Add water, if needed, to create a small amount of sauce
5.
Serve immediately over rice.
