Sandy's Broccoli & Rice Casserole

Ingredients
Rice
Broccoli
Mayonnaise

can of Cream of Mushroom
1
can of Cream of Chicken
Colby Jack Shredded Cheese
Sharp Cheddar Cheese

Eggs
1
Pack of Ritz Crackers or Plain Breadcrumbs
1
stick of Butter
Directions
1.
Preheat oven to 350 degrees and bring 8 cups of water to a boil.
2.
Add 4 cups rice to the boiling water. (For every 2 cups of water, add 1 cup of rice). Boil for 20 minutes on medium heat, covered.
3.
Cook 2-3 packs of frozen broccoli as directed by the pack and drain. Add to rice when it's done.
4.
Mix in your seasonings to your liking using onion powder, garlic powder, pepper, salt, and all purpose seasoning.
5.
Mix in 1 cup of mayonnaise, 1 can of cream of mushroom soup, 1 can of cream of chicken soup, and Colby jack cheese.
6.
Taste to make sure everything is seasoned to your liking.
7.
Add 2 lightly beaten eggs. (DO NOT TASTE AFTER ADDING EGGS)
8.
Evenly spread the mixture into a baking dish.
9.
Cover with sharp cheddar cheese and set aside.
10.
Place 1 stick of butter in a bowl and microwave until melted.
11.
Using a separate bowl, crush up 1 pack of Ritz crackers or use breadcrumbs.
12.
Cover the mixture with the Ritz crackers or breadcrumbs and drizzle melted butter on top.
13.
Sprinkle some paprika on top for color (optional)
14.
Cover with foil
15.
Place in oven for 45 minutes
16.
Remove foil 15 minutes prior to it being done.
17.
Insert knife in casserole, if it comes out clean, it's done.
