Black Beans And Sweet Corn Enchiladas

Ingredients

small can of black beans
1
small can of sweet corn
1
small can of rotel
8
flour fajita tortillas
1
bag of mexican blend cheese
1
can (24 oz) of enchilada sauce
salt, pepper, and cumin to taste
Directions
1.
cook black beans, corn, rotel, salt, pepper, and cumin in a small pan to make filling
2.
heat flour tortillas for 15 seconds on each side
3.
layer bottom of 13x9 in baking pan with enchilada sauce
4.
fill flour tortilla with filling and cheese
5.
pinch tortilla and flip in baking pan with pinched side on the bottom of the pan
6.
after filling the pan, pour enchilada sauce over the tortillas, covering them completely
7.
at a layer of cheese, covering the tortillas
8.
bake enchiladas on 350 for 15-20 minutes
