Baked Bbq Chicken With Broccoli Cheese And Rice Casserole

Ingredients

lb Bone in Skin On Chicken Thighs, About 6-8

tbsp Olive Oil

tbsp Brown Sugar

tsp Garlic Powder
1
tsp Onion Powder
1
tsp Salt
1/2
tsp Pepper
1/4
tsp Cayenne Pepper
1/2
cup Barbecue Sauce
Broccoli Cheese & Rice***
1/2
cup uncooked long-grain rice
6
slices bacon
1
large onion, chopped
1
(10 oz) package chopped frozen broccoli, thawed
1
can (10.5 oz) condensed cream of chicken soup
1
cup milk
1
block of Velveeta Cheese
Directions
1.
Preheat oven to 400 degrees.
2.
Line a large baking sheet with foil and set aside.
3.
Pat the chicken thighs dry with paper towels and place on prepared baking sheet and drizzle evenly on both sides with cooking oil.
4.
In a small bowl mix together the brown sugar, garlic powder, onion powder, salt, pepper, and cayenne pepper.
5.
Sprinkle the seasoning mixture evenly over both sides of the chicken and rub the spices in to coat well.
6.
Bake in preheated oven for 35-45 minutes until the chicken has reached an internal temperature of 165 degrees.
7.
Remove the chicken from the oven and baste evenly with the bbq sauce. Place under the broiler in your oven for 3 minutes.

Serve immediately.

BROCCOLI CHEESE & RICE CASSEROLE***

Preheat oven to 350 degrees .
11.
In a saucepan bring 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
12.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Saute onions in bacon drippings over medium heat.
13.
In a 9x13 inch baking dish combine cooked rice, bacon, onions, broccoli, soup, milk and cheese.
14.
Bake in preheated oven for 30 minutes, or until golden brown.
