Creamed Corn Casserole, Courtesy Of Chandra Kinney

This is one of my mother-in-law's recipes. So yummy and so easy!

Ingredients
2
slightly beaten eggs [4 if doubling]
1
(8 1/2 oz) box Jiffy corn muffin mix (dry) [2 boxes if doubling]
8
oz can creamed corn [14.75 oz can if doubling]
8
oz can whole kernel corn (including liquid) [14.75 oz can if doubling]
1
cup sour cream [16 oz / 1 pt if doubling]
1/2
cup softened butter [1 cup if doubling]
1
cup shredded swiss or jack cheese [1 1/2 cup if doubling]
Directions
1.
Combine all but cheese in mixing bowl
2.
Pour into greased 8 in square pan [13x9 pan if doubling]
3.
Bake at 350 degrees for 35 minutes or until light brown [bake an additional 15-20 minutes if doubling]
4.
Note: Finished product should be predominantly moist-wet like a casserole, not dry like cornbread
5.
Remove from oven and immediately sprinkle with cheese
