Zuppa Toscana Soup

Ingredients
1
lb ground italian sausage
1
onion, diced
3-4
cloves garlic, minced
1
tsp dried oregano
1
tsp dried dried basil
1/2
tsp black pepper
8
cups chicken broth
4-6
potatoes, peeled & cut into chunks
1/2
bunch kale or spinach
1
cup heavy whipping cream (optional)
Directions
1.
In a skillet over medium heat, brown the italian sausage and onion together. Drain excess oil.
2.
Add the minced garlic, oregano, basil, black pepper and salt to taste. Cook for a few minutes.
3.
Spoon this mixture into the pot (or crockpot) and add the chicken broth and potatoes.
4.
On stovetop, bring to a boil and reduce to a simmer. Cook for 15-20 minutes. In the crockpot, cook on low for 4-5 hours.
5.
Add the cream (if desired) and kale before serving.
