One Pot Chicken And Broccoli Alfredo

This has become a staple in our house - its so easy - using only one pot - and you LOVE it. This is one of your favorites for leftovers.

lb Boneless, Skinless, Chicken Breast, Cubed

oz Broccoli Florets, Raw

Medium Onion, Chopped
1/2
tbsp Extra Virgin Olive Oil

tbsp Minced Garlic

oz Mini Penne (or any shape pasta you prefer other than spaghetti)

cups Water
1
Chicken Bouillon Cube
4
tbsp Butter
1
cup 2% Milk

Original Creamy Swiss Laughing Cow Cheese Wedges
3/4
cup Shredded Parmesan Cheese (84g)
pinch of Nutmeg
Salt & Pepper
Directions
1.
In a large pot over medium heat cook the olive oil, onion, garlic, and cubed chicken.
2.
Once chicken is cooked through and no longer pink in the middle, add the pasta, water, and Bouillon cube. Stir well.
3.
Immediately place the broccoli over the top and place your lid on. The broccoli will not be submerged in water. Cook on medium heat, 10-12 minutes or until pasta and broccoli are soft.
4.
Remove from heat and stir in the butter, milk, cheese, a small pinch of nutmeg, and some salt and pepper!
