Crab Cakes With Cajun Lobster Sauce

Ingredients
1
lb lump crab meat
1/4
cup diced celery
1/4
cup diced onion
1/4
cup diced red pepper
1/4
cup fresh basil, julienned into strips
1
oz diced bread
1/2
cup mayonnaise
For the Cajun Lobster Sauce
1
cup heavy cream
2
tbsp Tony Sachere's
1
tsp worcestershire sauce
1/2
tsp paprika
1
tsp Tabasco
1
tsp lobster base
2
tbsp butter, melted
1/2
cup green onion
Directions
1.
Place crab meat onto sheet pan and spread evenly- place under broiler for 2 minutes.
2.
Remove all shells from crab meat.
3.
In a large saucepan, saute veggies for 2 minutes then allow to cool in fridge ~10 min.

Dice bread into 1/4" cubes.
5.
Combine all ingredients in a mixing bowl, folding in the mayonnaise last.
6.
Portion cakes using a 4 oz scoop and onto a baking sheet.

Bake on 350 degrees for 15 minutes

For the Lobster Sauce:

Reduce the heavy cream in a saucepan over medium heat for 8-10 minutes.

Add the Cajun seasoning to the reduced cream and whisk together.
11.
Whisk in the Worcestershire, paprika and Tabasco sauce.
12.
Whisk in the lobster base, melted butter and chopped green onions. Allow the sauce to simmer on medium heat for 5 minutes before serving
