Sweet Potatoe Crunch

This was a great side dish as a change from sweet potato puff

Ingredients
Sweet Potato Filling
4
cups baked sweet potatoes scraped from skins
1/4
cup granulated sugar
1/4
cup brown sugar
2
eggs beaten
1/4
cup evaporated milk
1
tsp vanilla
1/2
stick melted butter
1/4-1/2
tsp cinnamon
Crunch Topping
1/2
cup melted butter
1
cup brown sugar
1/2
cup chopped nuts
1/2
cup flour
Directions
1.
Set oven to 400 F

Bake sweet potatos for 1-1/2 hours in 400 F

Remove sweet potatoes and let cool until you can handle

Set oven to 350 F

Scrape baked sweet potatoes and combine in bowl with remaining ingredients - mix until well combined but do not over mix. Pour mixture into 9x13 inch pan.

In a clean bowl combine the topping ingredients. Sprinkle topping mix over the top of the sweet potato filling.
7.
Bake for 35 minutes and serve while hot.
