Chicken Taco Soup

Ingredients

onion, chopped
1
can (16 oz) chili beans, undrained
1
can (15 oz) black beans, rinsed and drained
1
can (15 oz) whole kernel corn, drained
1
can (8 oz) tomato sauce
1
cup chicken broth
1
can (14 1/2 oz) diced tomatoes, undrained
1
can (14 1/2 oz) diced tomatoes with green chilies, undrained
1
(1 1/4 oz) package taco seasoning
3
boneless skinless chicken breasts
shredded cheddar cheese (optional)
sour cream (optional)
Directions

Place the onion, chili beans, black beans, tomato sauce, chicken broth, and both cans of diced tomatoes in a slow cooker. Add taco seasoning and stir to blend ingredients. Lay chicken breasts on top of the mixture, pressing down slightly just until covered by the other ingredients. Set slow cooker on low heat setting, cover and cook for 7-8 hours. Carefully remove chicken breasts from the soup and allow to cool long enough to be handled. Dice the chicken into bite size pieces and return to slow cooker. Stir soup to blend in the chicken. Serve topped with cheese and/or sour cream.
