French Onion Soup

Ingredients

cup caramelized onions
1
tbsp flour
1
tbsp fresh thyme chopped
2
tbsp cognac
3 1/2
cups beef broth
salt & pepper
French bread
1 1/2
cups Gruyere, swiss, & fontina cheese
Directions
1.
Caramelize onions, once onions are a deep rich caramel color, sprinkle with flour & stir to coat. Add the thyme and cognac, salt & pepper. Stir & allow to cook a few minutes. Add beef broth & simmer, while soup is simmering. Toast bread under broiler. Brown each side. Ladle soup in bowl. Top with bread slices & lots of cheeses. Broil until cheese is melted.
