Jimmy Dean Breakfast Sausage Casserole

One holiday tradition at our house is to have this breakfast casserole for every "major" holiday.

Ingredients
1
(16 oz) package of Jimmy Dean Regular sausage (cooked, drained and crumbled)
4
cups cubed day old bread
2
cups shredded sharp cheddar cheese
10
eggs, slightly beaten
2
cans (12 oz) each) evaporated milk
1
tsp dry mustard
1
tsp salt
1/4
tsp onion powder (can substitute for about 4 green onions chopped)
Fresh ground pepper to taste
1/2
cup sliced mushrooms (optional...I never add)
1/2
cup peeled and chopped tomatoes (optional...I never add)
Healthier Version Substitutions:
Use mild Italian poultry sausage
Only use enough cheddar cheese to cover top
Use 8 eggs and about 1/2-cup to 1-cup egg whites
Use only 1 can of evaporated milk and then fill empty can with 1/2 and 1/2 milk and pour in
Directions
1.
Place bread on bottom of greased 9x13 baking dish in an even layer.

Sprinkle with sausage (and green onions if using). (Can put a small amount of cheese sprinkled on at this point too) (Add mushrooms and tomatoes now too if using)
3.
Slightly beat eggs in a large bowl (or 6-8cup measuring cup). Combine milk, mustard, onion powder (if using) and salt. (Add a splash of hot sauce if you want)
4.
Pour evenly over bread mixture making sure to cover bread and sausage (add more milk and eggs if needed).
5.
Sprinkle cheese overtop and pepper to taste.

Cover and refrigerate overnight (can also be put directly in over)
7.
Take pan out of fridge and let warm or put in oven as it pre-heats. Pre-heat oven to 325.
8.
Bake uncovered for 55 to 60 minutes or until center is set. Tent with foil if top begins to brown too quickly. (I usually do the opposite, bake 45minutes covered, then uncover and bake remaining time.)
