Pickled Red Onions

Great addition to everything: tacos, salads, eggs and sandwiches!

Ingredients
1
Large Red Onion or 2 Small Red Onions
1 1/2
cups Water
1 1/2
cups Vinegar (Apple Cider, White, or Mixture)
1
tsp Salt
1
tbsp Sweetener (Sugar or Honey)
Directions
1.
Peel and thinly slice onions.
2.
In a small saucepan, stir together the vinegar, water, salt and sweetener. Cook over medium-high heat until the mixture reaches a simmer. Alternately, you can heat the mixture in the microwave or heat the water in a kettle and then combine.
3.
Place the thinly sliced onions in a mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture.
4.
Let the onions marinate overnight. Sliced onions should be completely immersed.
