Shrimp And Pineapple Burger

Shrimp Patties

cup Raw Shrimp, peeled and deveined

Garlic Cloves

cup Parsley or Cilantro

tbsp Lemon Juice
1/4
cup Panko Breadcrumbs
1
tbsp Egg Whites (or the egg whites from 1 whole egg)
1
tsp Salt
1
tsp Pepper
1
tsp Paprika
1
tsp Chili Powder
1
tsp Onion Powder
1
tsp Olive Oil or Spray
Lemon Garlic Aioli
1
tbsp Low Fat Mayo (or Miracle Whip)
2
tbsp Fat-Free Greek Yogurt, Plain
1
tsp of Garlic Powder
1
squeeze of Lemon Juice
1
tsp of Sriracha
Burger Supplies
2
Hamburger Buns, Whole Grain
2
Pineapple Rings
2
Slices of Tomato
2
Bunches of Spinach
Directions
Shrimp Patties
1.
In blender or food processor, pulse the raw shrimp and garlic into a paste.

In a bowl, combine the shrimp and garlic paste with parsley, lemon juice, panko breadcrumbs, egg whites, salt, pepper, paprika, chili powder and onion powder. Form two patties.
3.
Cook patties in a hot skillet that has been sprayed with olive oil. Patties should take 4 minutes on each side.
Lemon Garlic Aioli
1.
In a small bowl, combine mayo, yogurt, garlic powder, lemon juice and sriracha.
Build the Burger
1.
Toast buns on skillet then build the burger. Place the aioli on the bun, add shrimp pattie, pineapple ring, tomato and spinach.
