Dundee Cake

Jackie's Christmas baking favorite.

Ingredients
1
cup soft shortening.
1
cup sugar.
1/4
cup whole candied cherries.
4
eggs.
2
tsp orange peel (grated) "zest".
2
cups sifted flour.
1
tsp salt.
1
cup currants.
1/2
tsp nutmeg.
1
cup candied fruit.
1/4
cup light sweet wine.
1
cup blanched almonds.
Directions
1.
Preheat oven at 300 degrees.

Crease a 9" tube pan an line with greased aluminum foil.
3.
Cream together shortening and sugar until light and fluffy.
4.
Beat in eggs one at a time.
5.
Blend in orange zest.
6.
Sift together flour, baking powder, sal, and nutmeg.
7.
Mix dry ingredients into creamed mixture.
8.
Add wine and beat until smooth.
9.
Combine almonds, currants, candied fruits, and cherries, and stir into batter and mix thoroughly.
10.
Pour batter into pan and bake at 300 degrees with a shallow pan of water on lower rack for 2 hours.
11.
Cake should be delicate golden brown, not a deep brown.
12.
Remove from oven and cool.
13.
When cake is cool rewrap in foil and refrigerate for several days.
14.
Slice and serve while cold
