Chicken Creole Rice Soup

Wonderful spicy southern comfort food! Easy and delicious!

Ingredients

cups chicken cooked, cubed or shredded
4
cups water
1
box Rice-a-Roni, Chicken flavor
1
cup chopped onion
1/4
cup Bell Pepper, chopped fine (fresh, frozen or dried)
1
cup frozen corn (Substitute canned)
1
cup frozen peas (Substitute canned)
1
cup chopped cabbage (optional)
4
slices Jalapeño pepper, fresh or canned
1/2
tsp Cumin and Lowry’s Garlic salt w/Parsley
1
tsp Creole Seasoning
1/2
tsp Cilantro, dried
Directions
1.
Add water, frozen corn and peas to large pot. Bring to boil & simmer until vegetables are tender. Also add any dried/frozen other vegetables.
2.
Cook Rice-a-Roni according to package directions. Add onions, cabbage, and fresh or frozen peppers to cook with rice.
3.
Add all spices to pot while simmering

Prepare chicken while these are cooking; chicken should be already cooked. Roasted store-bought chickens work well.
5.
When rice mix is done, add canned Jalapeños and chicken to soup pot. Bring all to slight boil turn heat down and simmer for 15 minutes.
6.
Serve with crackers. Delicious!
