Dundee Cake For Christmas

Ingredients

cup soft shortening
1
cup sugar
1/4
cup whole candied cherries
4
eggs
2
tsp orange zest
2
cups sifted flour
1
tsp baking powder
1/2
tsp salt
1
cup currants
1/2
tsp nutmeg
1
cup candied fruit
1/4
cup light sweet wine
1
cup blanched almonds
Directions
1.
Preheat oven to 300 degrees.
2.
Grease a 9" tube pan, and line with greased aluminum foil.
3.
Cream together shortening and sugar, until light and fluffy.
4.
Beat in eggs one at a time.
5.
Blend in orange zest
6.
Sift together flour, baking powder, salt, and nutmeg.
7.
Mix dry ingredients into creamed mixture.
8.
Add wine and beat until smooth.
9.
Combine almonds, currants, candied fruits, and cherries.
10.
Stir into batter and mix thoroughly.
11.
Pour batter into pan and bake at 300 degrees with a shallow pan of water on lower rack for 2 hours (cake should be a delicate golden brown, not a deep brown).
12.
Cool.
13.
When cake is cool rewrap in foil and refrigerate for several days.
14.
Slice and serve while cold.
