Banana Bread

No Eggs...this favorite was passed on from the Hanke Sisters Stacy who got it from her sister in law

Ingredients

cups All Purpose Flour
1
tsp Baking Soda
1
tsp Salt
3/4
cup Sugar
3
Large Ripe Bananas
1/2
cup Applesauce (One Single lunch pack will work, I use Cinnamon Applesauce)
4
TB Butter
1/4
tsp Vanilla Extract
1/2
cup Chocolate Chips (Optional)
1/2
cup Chopped Walnuts (Optional) ( I have never added)
Directions
1.
Preheat Oven to 350 degrees.
2.
Mix the first five ingredients together in a large mixing bowl.
3.
In separate bowl, mash the bananas well.
4.
Stir in butter, vanilla extract, and applesauce into the bananas
5.
Add the banana mixture into the mixing bowl with the dry ingredients.
6.
Mix gently by hand, just enough to form a thick clumpy batter. If the mixture seems to dry, add more mashed banana or applesauce.
7.
Fold in the chocolate chips and/or walnuts if using.
8.
Pour batter into greased loaf pan and bake for 45 minutes or until bread is a deep golden brown and inserted knife in center comes out clean. If using individual bar pan adjust baking time to approximately 20 mintues.
