Potato Buns

gr Instant yeast

ml Milk

gr Cooked potato

gr Butter

gr Sugar

gr Salt

gr All purpose flour
Directions
1.
Start by cooking a medium potato until soft. Then peeled, smash it, let it cool and portion 140 grs.
2.
Mix in a bowl the potato, water, milk, butter and sugar. Then add the flour, salt, yeast and the egg to make the doug.
3.
Knead the doug for around 7 min until it is even and soft. Place it in a bowl with some oil and let it rise.
4.
Turn the risen dough out, make even portions of 70-100 grs and make round buns placing them on a lightly greased baking sheet. Let them raise until doubled on volume.
5.
Bake for 6 min at 400F.
