Cheese Stuffed Manicotti

This version uses Ricotta

Ingredients

Carton (15 ounces) reduced-fat ricotta cheese
1
small onion
1
large egg
2
tbsp minced fresh parsley
1/2
tsp pepper
1/4
tsp salt
1
cup shredded mozzarella cheese
1
cup grated parmesan
sauce(see separate recipe for spaghetti sauce)
Directions
1.
preheat oven to 350 degrees
2.
In a small bowl, mix the first 6 ingredients, stir in 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese.
3.
Spread 3/4 cup of sauce onto bottom of a 13 X9 in baking dish coating with organic cooking spray
4.
Fill uncooked shells with the cheese filling mixture, arrange the filled shells over the sauce in the baking dish.
5.
Top with more sauce to taste.
6.
Bake uncovered, 50 minutes or until pasta is tender.
7.
sprinkle 1/2 cup shredded mozzarella cheese and 1/2 cup parmesan cheese.
8.
Bake uncovered for 10-15 minutes more until cheese is melted.
