Spinach Cheese Stuffed Manicotti

This version is with spinach and cottage cheese I use fresh spinach not frozen but you can use frozen just thaw and drain it

Ingredients

pkg manicotti shells
1-10
oz package chopped spinach (if you use frozen thaw and drain it)

oz carton small curd cottage cheese
2
-cups shredded mozzarella cheese
1
-egg
1
tsp dried oregano
1/4
tsp black pepper
spaghetti sauce (see recipe in this cookbook) meatless or with meat depending on your preference
1/2
cup grated Parmesan cheese
Directions
1.
preheat oven to 375 degrees.

Cook manicotti shells, according to package directions, drain and set aside
3.
Combine spinach, cottage cheese, mozzarella, egg, oregano, and pepper in a medium mixing bowl stirring well. To stuff the manicotti shells, you can either spoon it in, iI or place the filling mixture in a zip-lock bag and squeeze filling into the shells.

Spread 1/2 cup sauce in a lightly greased 13 X 9-inch pan. Arrange stuffed manicotti in a single layer over sauce.; spoon remaining sauce over manicotti. Cover and back for 30 minutes or until hot and bubbly.
5.
Remove from oven, place more mozzarella and parmesan cheese and place back in oven.
6.
leave in the oven until cheese melts.
7.
Serve immediately.
