Sunday Gravy

Ingredients

cup olive oil
1
lb uncooked sweet or hot Italian sausage
1
recipe uncooked meatballs (see next page)
2
yellow or white onions, minced
6
cloves garlic, smashed
4
cans (28 oz) peeled plum tomatoes, including liquid
2
cans (6 oz) tomato paste
2
tsp dried oregano
2
tsp dried parsley
1
tbsp dried basil
2
tsp salt
1
tsp ground pepper
Directions
1.
In large heavy stock pot set over moderate heat, warm the oil and brown sausages, onions and garlic, stirring frequently, for 6 - 8 minutes. Add tomatoes, tomato paste, herbs, salt and pepper. Bring mixture to a boil and then reduce heat to low and simmer, stirring occasionally, for 1 hour. Add meatballs and cook for 1 to 1 1/2 hours more. When nearly ready to eat, cook 1 pound pasta according to package directions. Remove meat from sauce and serve separately. Pour some of the sauce into a gravy boat and set on the side. Add pasta to remaining sauce, and toss together with a little extra olive oil. Serve with grated parmesan cheese.
