Directions

Preheat oven to 180°C. Spray a 12-hole muffin tin with cooking spray (this is a recipe that works fantastically well using silicone muffin trays).

In a large bowl, mix together the pasta, veggies, sausage, cheese, herbs, salt and black pepper.

In another bowl or jug, combine the eggs, milk and garlic. Use a whisk to stir in the flour and remove any lumps (give it a good hard stir and they’ll come out). Pour over the dry ingredients and mix well to combine. Divide the mixture evenly between the muffin holes and bake for 20–25 minutes or until golden and set.
