Courgetti With Tomato Sauce

Courgetti is a delicious healthy alternative to pasta. Tastes great with this homemade tomato based sauce.A light meal on its own or a great accompaniment to chicken and fish.

Ingredients
1
onion, chopped
4
garlic gloves, chopped
2
tbsp tomato puree

sun dried tomatoes, roughly chopped
2
tsp dried oregeno
1
tbsp brown sugar
400
gr tin tomatoes
large bunch fresh basil, chopped
salt and pepper
olive oil
1
medium box chestnut mushrooms
3
large courgettes, spiralised
Directions
1.
Heat some olive oil in a pan. Add onion and garlic and free for a few minutes until onion is soft.
2.
Add tomatoes, tomato puree, sun dried tomatoes, sugar, basil and oregano. Stir well and simmer for 10 minutes. Season with salt and pepper.
3.
Add sauce to food processor and blitz to form a smooth sauce.
4.
Heat oil in a pan and add sliced mushrooms. Fry for a few minutes until cooked.
5.
Add spiralised courgettes and fry for 3 minutes.
6.
Add tomato sauce from earlier and cook for 2 minutes until heated through.
7.
Serve with grated parmesan if desired.
