Put oil in deep 12" skillet, heat on medium-high. 1 minute later add garlic, ginger & red pepper flakes, and cook until they just sizzle - less than 1 minute.

Add the pork and stir to break it up. Cook, stirring occasionally until it loses its pink color.

Add the scallion and stir, add the stock. Cook for 1 min or so, loosening any stuck meat, then add tofu. Cook, stirring once or twice until tofu is heated through, about 2 minutes.
