Heat oil in stockpot and add onion, celery and carrots, sauté about 5 mins. Add curry paste, curry powder, spike, potato and sweet potato. Stir until potatoes are coated with seasoning, turn to medium-low heat and cover for 5 mins.

Add lentils and stir thoroughly, add vegetable broth and tomatoes, bring to a boil, then turn down to simmer for 30 minutes, covered.

remove cover, add cauliflower, salt and honey; simmer an additional 15-20 minutes or until cauliflower is tender.

Add coconut milk and cilantro, stir and adjust seasonings if necessary.
