Grandma Margaret's Vegetable Soup
This recipe was made by my mother, Margaret, and also my Grandma Lena. Grandma Lena liked to use purple cabbage and my mother used green. It is a matter of preference as they taste the same.
Melt the butter in the bottom of the soup kettle and caramelize the onions. Add the chopped up celery until tender. Add chopped cabbage and water until it is covered. Add the diced carrots and potatoes and bay leaves. Add in the Lipton soup mix and simmer for an hour. You can add optional items such as mushrooms, barley, rice or corn if you want to. My mother always through a little rice in the kettle but my husband liked the soup as simple as possible.

Before serving, my mother always added a teaspoon of vinegar and my Grandmother would add a little fresh cream.

This is wonderful served with fresh baked bread.
