cup all-purpose flour, for shaping biscuits (do NOT use self-rising)

Directions

Preheat oven to 475 degrees Fahrenheit. Spray an 8" round cake pan with cooking spray.

In a medium bowl, combine self-rising flour, sugar and salt and whisk well. Add shortening and combine with a pastry cutter or fingers until there are no lumps larger than a pea. Stir in the heavy cream and buttermilk, make sure you don't overmix. Let sit for two to three minutes. Dough will be very wet looking.

Put the all-purpose flour into a shallow bowl or plate and coat your hands with flour. Spoon 1/4 cup of the wet dough into the flour. Gently form the dough into a ball with your hands and place in the prepared cake pan. Repeat with remaining dough.

Brush with melted butter and bake until set and lightly browned, 15 to 20 minutes.
