Cover the pork in the rub and place in a non reactive bowl and cover. Place in the fridge to marinate overnight.

The next day, in a pan, preferably cast iron. Sear every side of the pork for 2 minutes each side.

Place in a oven proof pot, with lid, and place in a preheated 200 degree oven. Allow to cook for about 3 to 4 hours depending on the size of the meat or until the meat begins to pull apart easily.

Combine all the ingredients of the mop sauce in a bowl. The last hour of roasting brush some of the sauce all over the meat. Reserve some to serve with later
