Daddy's Grilled Chicken Skewers

This is daddy's recipe for chicken skewers that are great for a bbq. So when you have a few mins of sun run outside, chuck them on the bbq and then run back inside when it starts raining to eat them.

Ingredients
2
lb skinless chicken breast, cut into 2 inch pieces
1/4
cup olive oil
salt and pepper
5
cloves of crushed garlic
2
lemons
Directions
1.
Soak a package of bamboo skewers in warm water for 20 to 30 minutes; drain.
2.
Mix all the ingrediants (except olive oil) and marinade the chicken pieces.
3.
Just before putting on the grill, thread 3 pieces of chicken on each skewer.
4.
Brush chicken with olive oil.
5.
Arrange chicken skewers on grill so that they are not touching. Cover grill.
6.
Grill chicken until cooked through, 6 to 8 minutes, turning once.
7.
Serve hot or at room temperature. Or let them cool, cover with plastic wrap and refrigerate to serve later.
