Heat 1 T. oil in a nonstick pan. Season the salmon with salt, pepper and coriander. Saute turning once until salmon is just cooked through, about 5 min per side depending on the thickness of the fillet.

Heat 1 T oil in a a separate pan. Add garlic and infuse the oil for until the garlic is fragrant and golden brown. Remove garlic clove and discard.

Add the greens to the garlic infused oil. Season with salt and pepper and saute until wilted and tender.

Plate: start with a 1/4 cup of sauce on each plate. Make a pile of greens and then add a portion of salmon. Enjoy
