Ry's Pulled Pork

Ry's pulled pork recipe! If you don't want it to be as spicy, just cut back on the chipotle peppers. Great as tacos too!! I found this paired well with sweet potato fries :)

Ingredients
1
Pork Butt Roast; quartered
2
large onions (white or yellow)
1
can chipotle peppers in adobo sauce
2
liter Dr. Pepper (I used just enough to cover the meat)
1
bottle Sweet Baby Rays BBQ sauce
1
Pork Rub (McCormick's is good)
Directions
1.
Rub meat all over w/pork rub - if possible leave overnight in the fridge
2.
Take onion petals and cover bottom of crock pot then set 2 pieces of meat over the petals
3.
Repeat layers and place fridge overnight if you can. If not, no worries.
4.
Next Day: empty can of adobo sauce and peppers around the sides and on the top
5.
Fill crock pot with Dr. Pepper
6.
Cook on low for 8 hours
7.
Shred pork with 2 forks as meat should fall apart
8.
Add BBQ sauce and stir into the shredded meat
