Christmas Pudding?
Christmas pudding is a type of pudding traditionally served on Christmas Day (December 25) as part of the Christmas dinner. It has its origins in medieval England, and is sometimes known as pud.
cup - candied orange and lemon peel coarsely chopped

cup - seedless dates chopped

cup - pecans chopped

cup - currants
1/4
cup - raisins

tbsp - brandy

tbsp - lemon juice

cup - flour
1/4
tsp - cinnamon ground

tsp - cloves ground

tsp - nutmeg ground

/2 cups - fresh white bread crumbs

cup - brown sugar

- eggs beaten

cups - water
Directions

1 To cook reduced quantities : do not reduce water at all.

2 Combine orange and lemon peels, dates, pecans, currants, raisins, brandy and lemon juice. Mix well.

3 Sift together flour, cinnamon, cloves and nutmeg. Add bread crumbs. Stir.

4 Mix butter and sugar. Beat till light and fluffy. Gradually add eggs, beating well after each addition. Fold in prepared flour and fruit and nut mixture.

5 Spoon the mixture into a greased 1 quart (1 litre) mold. Cover mold tightly with aluminium foil securely tied.

6 Pour water into cooker. Put grid in cooker. Place mold on grid.

7 Close cooker without pressure regulator. Cook on high heat until steam passes through steam vent. Reduce heat and cook for 15 minutes, ensuring a steady stream of steam from steam vent.

8 Place pressure regulator in position. Bring to full pressure on high heat. Reduce heat and cook for 50 minutes.

9 Remove cooker from heat. Allow to cool naturally.

10 Open cooker. Take out and uncover mold. Run a knife around edge of mold. Place a serving dish on top of mold and invert. Shake gently to release. Remove mold. Serve pudding hot, accompanied with hard sauce.

1 Combine butter and sugar. Beat until creamy. Add brandy. Continue beating until well blended.

2 Add nutmeg. Chill until hard (approximately 1 hour).
