Wash tomatoes. Cut out stem area and hollow as much as possible. Try and leave and thin shell of a tomato. This is important so the tomato doesn't mask the other flavors.

Mix 2 oz. of goat cheese with the other ingredients, combine thoroughly.

Cut remaining 2 oz. into 4 equal pieces and place at the bottom of the inside of the tomato.

Split the mixture into 4 equal pieces and top off tomatoes.
