Preheat the oven to 375 degrees. In a large frying pan, cook the sausage over medium-high heat. As it cooks, continuously break apart the sausage until it crumbles. Remove the sausage from the pan, and set it aside in a large bowl.

In the same frying pan, add the spinach and onion. Saute them over medium-high heat for 3-5 minutes or until soft. Drain any excess liquid, and add the spinach and onion to the bowl with the sausage.

Add the eggs, sea salt, and pepper to the sausage mixture, and stir until the ingredients are well blended. Lightly spray a mini muffin tin with avocado oil. Fill the tin with the sausage and egg mixture until each cup is full to just below the rim. Bake the "quiches" for 15 minutes or until they are slightly browned and puffy on top. Remove "quiches" from the tin with a spoon before they are completely cool. Serve them warm or at room temperature.
